The seeds of a remarkable meal—over the holidays, or any day—are planted with love and care. For Chef Jason Prendergast, Director of Culinary Experience at FIG, what makes a meal memorable is the spirit of giving.

 

Prendergast creates collaborative relationships with local growers, ranchers, and farmers at the Santa Monica Farmers’ Market—all of whom have become close friends.

 

This Thanksgiving, bring FIG home with our Thanksgiving Day curbside pick-up. Feast on delicious, traditional dishes from our thoughtfully crafted menu with friends and family.

In accordance with local guidelines, the Fairmont Miramar Hotel & Bungalows and FIG Restaurant will require every guest to show proof of vaccination with a matching government issued ID when entering our dining outlets. Should you be unable to provide, patio dining will be offered, if available.

FIG, located in Santa Monica at the Fairmont Miramar, is a neighborhood bistro committed to fresh, seasonal cuisine. The menu features diverse Southern California bounty, sourced from multiple weekly visits to the local farmers markets and from specialty foragers that comb the coastline for hard to find items. And although dishes are added and subtracted based on ingredient availability, you can be sure perennial favorites like our Lobster Cobb Salad or Mary’s Chicken have a permanent place on the menu.

 

Executive Chef Jason Prendergast, trained in the classic French tradition, brings a fresh, modern style of cooking that emphasizes the innate flavors of each ingredient. Prendergast has longstanding relationships with local farmers, ranchers and fishermen, providing him with access to the best and freshest local harvests. In fact, he knows this farmers and fishermen so well that he can tell you where livestock was raised and what their diet consisted of, name the fisherman, and tell you where his catch was caught.
